Creating My Own Dish

Here we are Fall already and I am getting ready for my long awaited Father Daughter vacation next week.  So excited it's been a few years since we've taken one.  I know we are both excited for traveling west is promising to be much warmer than the weather is around here these days.  Now where did I put those shorts of mine?

Well a few years ago my husband and I took a trip to one of our favorite places Montreal.  While up there we went to an amazing restaurant where I had a crepe with chicken supreme.  I've tried to recreate that dish and well my crepes just didn't taste the same.  So in my dreaming of that wonderful trip and longing for that dish again I decided to put my own twist on it and I recreated the supreme part by using my chicken pot pie filling that my husband loves.  As for the crepe well I nixed that idea and decided on a belgium waffle but infused the batter with rosemary.  It turned out to be a hit in our house.

What was the best dinner conversation that night?  The fact that so many people think one has to stick to a recipe or says they cannot cook.  It always amazes me how many people think cooking is scary or hard.  It's edible artwork that goes as far as your imagination and taste buds will let you. If you like something try and recreate it.  What's the worst that can happen? You have to try a few times to get it just right.

As for those recipes in a book.  Go for it and try the recipe.  If your a beginner make it the first time or so the way it says till your use to it then stray and experiment.  If you are a little more advanced go for it.  Use your imagination on how you think you can alter it and see what happens ~ BE DARING.

And the best thing anyone who tries a recipe and loves it.  Remember a great recipe needs to be shared.  Spread the love.

A Pen Pal Meeting

Jackie & Claudia

Summertime means the long anticipated vacation break.  Every year I look forward to a trip back home to Upstate New York or the excitement of where my husband and I decide to escape off to to get away from life's every day routines.  This year due to our big kitchen remodel escape vacation was mentioned but not persued.  We still have our huge hopes of travel to one of our favorite get a ways Montreal which I will prey means a day stop in my hometown area of Utica/Rome N.Y.

As my vacation time has come up this year I have been fortunate to take my days to enjoy a very good friends wedding, do work around our home and currently experience a magical week.  My pen pal of of some years now who was visiting the states from Germany with her family was taking some time out of her months vacation to spend time here in Pittsburgh  with Mike and I.  What a magical 4 days.  Visiting, touring our city, spending the day at Kennywood amusement park, cooking and shopping.  And having Batmobile sightings a few times.  Yes the new Batman Darknight Movie was being filmed in our city and added excitement to their visit.

The weather couldn't of been more perfect for their Wednesday thru Sunday stay.  Our first evening together we hung out at home and enjoyed the evening with grilling out and just visiting and relaxing on the back porch.

Thursday the local adventures began.  We started with a late lunch at a must if you visit Pittsburgh stop at Primanti Bros. for their "Almost Famous" Sandwich but as most know yes it is famous.  Yes the sandwich with the slaw and french fries served between the two slices of amazing bread.  It's always fun to see peoples faces / reaction when the servers place the sandwich in front of someone who has not seen this sandwich before.  The large opened eyes and the Oh My reactions.  Get's em every time.

Then we moved on to sight seeing downtown.  Starting at Station Square, riding the incline up to Mt. Washington to the overlook.  I have lived in this city 24 years now and to this day I still get excited to see the cities skyline.  We then strolled over to the cities exciting "T" transportation and road over into the cities hub and wandered the streets looking about and showing famous building.  Ending up at the Point where we studied the outline of the fort.  Which by the way we did discover the French's spelling of the Monongahela river which was far different than the way we are all familar with.

We made our way back to Station Square where Hard Rocks Bike Night was in full swing.  That got everyones attention.  It was alot of fun seeing all the bikes and oh the people watching was even more the thrill.  Yes Hard Rock puts on this spectacular show but naturally we were going to Houlihan's for dinner.  Luckily we got a table out on the patio so we could still admire the nights outside festivities.

Thanks to the amazing staff at Houlihan's Station Square that I miss dearly.  We had a ball between Bike night, food, beverage and the great company it was a great night.  We sampled many of the small plates on the menu and of course every dessert.  We were officially full when we left.

The next day we packed up a cooler for a traditional picnic to be enjoyed at Kennywood Amusement Park.  Again the weather was in our favor.  When we got to the park we found a great picnic spot set up shop then off to enjoy the park.  Road many rides and again took pleasure in people watching.  It's always fun to watch how people react to rides or even react to watching people ride rides.  We stayed till the park closed.  We also introduced our friends to deep fried oreos and funnel cake while we were there.  Again the reaction is great when you say "oh you must try the deep fried oreos."  "Deep Fried Oreos!?"  And then the look.  And wouldn't you know yesterday my favorite cooking magazine (Food Network) arrived in the mail and it had a whole article on what foods to and not to deep fry and it gave recipes on how to.  Guess I will be making deep fried oreos at home now.

Kennywood was a blast riding rides with friends who had never been to the park and seeing it through their eyes.  I remember my first time going to the park back in 1988.  I was in awe that this park was just minutes from my home.  Where I grew up to attend a park like this my friends and I had to travel over 3 hours to get to this type of fun.  A day of riding and enjoying a traditional picnic brought back many childhood memories for me.  It was a great day.

Saturday brought shopping for the girls.  We wandered down into Pittsburghs famous Strip District with one store in mind.  Penzeys Spice Store.  Yes we did look at a few other things but the spice store was our main destination.  And so worth the trip.  Everytime I have been there I just want to buy one of everyspice.  As my friends wandered through the shop I think they got the same feeling too.  Amazing how spices make your mind work to oh I can make this or that.  Then we went on back over to Station Square to New York New York for some clothes shopping, great customer service from the gal who was working the store.  Nice when sales people have personality and don't make you feel like you are bothering them.  We then traveled on up to the Waterfront to Famous Footware and then on to Rock Bottom for a delicous glass of sangria then on to Giant Eagle for dinner supplies.

Dinner that evening was alot of fun.  We made grilled pizzas ~ 3 different types.  It was a fun way to visit and cook together.  A few played video games and of course the Pittsburgh Steelers were on one of the televisions.  Yes it was a great night.

Sunday and the goodbyes came to quickly.  We truly enjoyed our visit with our friends and hope we will have to oppurtunity to do it again.  I can officially say this has been the most memorable stay at home vacation we ever had.

Cooking Withdrawl

What have we done?
After living in our home for almost 11 years now we have finally taken the plunge into remodeling our outdated kitchen.

For years I have so longed for an updated modern kitchen with all the bells and whistles that today's kitchens have to offer but there was one little barrier standing in my way.  Our home is my husbands childhood home and as you all know the heart of the home is in the kitchen and his family truly lived in their kitchen.  His mom ran her Avon business out of her kitchen from their peninsula table which was the heart spot in the room.  After his parents passed we decided to move to the bigger home on a quieter street which was less traveled than what our 1st home was on.  Of course I never thought the day would come that a change in the kitchen would come.  When I would ask about changes I would get "My mom lived here 40 years and liked things just the way they are." Yes it's been a journey.

Living in a home that had a kitchen that was a one person working kitchen with no dishwasher was a rough road for a person who's career by trade is working in a restaurant for a living.  Amazingly this past November I was told my Christmas gift this year would be a new kitchen.  I just about fell over.  The planning process has been a long one.  I never would of thought the journey starting in November would still be under way in April.  But my dream is coming true.  I put a lot of heart and background into the planning.  I used the ideas in my head of how the operations of a restaurant work to make the flow of preparing a meal especially a holiday meal work with ease and when I presented my ideas to everyone I did get a few raised eyebrows but in the end everyone truly saw the vision of the direction I was going.  Now the puzzle is being put together.

As you can see from the above photo the cabinets arrived actually today and the anticipation of the final results is pain staking.  We ordered the cabinets seeing the style we loved but the cabinet stain we only had seen a small piece of wood to choose from.  So when we actually got to see a cabinet when they unwrapped one was a huge sigh of relief.  It was perfect.
I guess it's like anything when you plan something out without really knowing the results you have an unsettling knot in your stomach for you pray you make the right choices but also you also realize what we pick out we have to live with for 40 or 50 years.  It's not like you just change your kitchen's look like you change your sheets every week.

Having to live on cereal and yogurt everyday is healthy yes but can get depressing for a gal who is so use to cooking something everyday.  I haven't been able to watch the Food Network like I usually do for I can't go in to the kitchen grab ingredients and create.  I've even been avoiding reading my cookbooks and cooking magazines some just because they make me hungry looking at the photos.

I keep thinking about what I'm going to cook first once everything is in place.  The excitement of the new kitchen is insane not only the look but the new appliances.
Oh what will the 1st creations be? Yes I'm like a kid in a candy shop.  Wheels are a churning, will it be homemade perogies, chicken riggies, chili, a turkey dinner with all the fixins???  Yes I'm having cooking withdrawls big time.

Well the kitchen adventure lives on.  I must smile, relax and keep dusting till it's all said and done. The way I see it Extreme Make Over Home Edition builds a home in 7 days why can't a kitchen be done in 24 hours???  I'm not impatient now am I?

Angel in Heaven

Another angel in heaven.  Yesterday an amazing woman close to our hearts sadly left us.  It brought back sad memories for me when I myself got the unwanted call that my mother had passed.  Odd how quickly certain emotions arise to the surface and show themselves.  I'm honored I had the past 24 years to get to know Jo.  She was truly someone who left a lasting impression on all who crossed her path.  RIP ~ Josephine Peden Huss.

Exciting Changes

Here we are streaming into the middle of March and it always amazes me how life seems to fly by as I grow older. Remembering back to my "kid" years time just seemed to linger and never move along. Gosh I miss the good old days.

It's an exciting time around our house for we made the decision this past fall we were jumping in to the remodeling world and updating our home. Starting with my favorite room in the whole house the kitchen. When we started on this venture I would never of guessed that planning a remodel would take months and lots of homework. I guess I was blind to the real world in this matter and thought it all happened with a snap of ones finger. Oh no was I ever wrong.

Finding a designer / company to work with, what exactly did we want, then the want list had to be streamlined to what exactly the area we had to work with and how to make it all happen. As we went through pages of books, web sites, models in the showroom the fear kept bouncing around inside of my brain "What if I choose something horribly wrong? I'm gonna have to live with this for the rest of my life!!! " I am at the point of announcing there is no turning back on our decisions for everything is ordered Now I'm at the packing up the kitchen stage. Yep that truly started today. #1 goal is if I haven't used it in years and even forgotten about it way back in the cupboard then it must go. Of course all was going well till I found this ancient old bottle opener back in a drawer and asked my husband if it he was cool if I got rid of it. See this was his childhood home so I'm having a feeling I may find a few things tucked back in corners I had missed during the transition of our move in 10 years ago. As you already figured the bottle opener is staying. I hope these 27 new cabinets have plenty of room.

My passion for cooking is the most relaxing thing I do in my life. This new kitchen will be a boost to my cooking spirits. I stumbled over the most amazing cookbook last week on line and without a doubt ordered it. A Taste of Utica from CNYEats.com central New York has it's own unique style of cooking and just flipping through the pages after the book arrived I could taste home. Chicken Riggies, Utica Greens, Tomato Pie, Hemstrought's Bakery Half Moon Cookies, Blueberry Pierogi, Peperoni Soup, Italian Rum Cake, Pizza Dough, Our area sauces. Maybe I'm a little homesick and need to plan my trip back upstate soon. Ya think?

So the countdown begins, cupboards are cleaned out, and the excitement for the arrival of a dishwasher in a home that never had one is more than words can express.

Do you really stop and savor?

Life goes passing by faster than I realize these days. When growing up a week felt like months and months felt like years. Now time just flies and I somehow never know if I'm coming or going. I guess life has a way of keeping us on our toes now doesn't it?

Here it is the end of June 1/2 way through 2010 already. I haven't done many exciting journeys to proclaim. I wish I had. Work ties up alot of time but that's what happens when you choose the hospitality business. I have made a few cook outs with my friends this year that have been truly a treat. Time with friends and family mean the most to me and when I get those moments I grab onto them with both hands. I enjoy the relaxing and laughter that come with these special times.

A few weeks ago I experienced a 1st. It's taken me 44 years but I am finally able to say I have seen the Liberty Bell. My job took me to the Philadelphia area for two weeks. While there I actually had a day off to tour the old city. My love of history grabbed me by storm and off I went. I enjoyed my afternoon wandering around learning about Philly. On the day I was to drive back towards Pittsburgh I saw a billboard to my favorite town Gettysburg. I couldn't resist. It was as if my car was in auto pilot and I had no choice. What an amazing afternoon that was. Re enactors were actually in town that day and I was also able to tour the new visitors center and museum. Yes this was definately a great week to fill me with history at it's best.

While I was away for work I was able to eat at two amazing Restaurants. Redstone Grille and Devons Seafood. Devons is a sister location in the company I work for and that was a "wow" experience for me. The menu and service were out of this world and to be able to sit there and look outside onto this park that was like Philly's version of Central Park was alot of fun. The people & dog watching was endless. And to have food that was not the same as what I eat and serve everyday was truly a treat.

This summer I have made a decision that has altered my summertime cooking. One of the greatest things about summer is cooking outside on the grill with fresh foods and enjoy the beauty of the great outdoors. Ever since I can remember I've owned a gas grill since moving out on my own. This summer I have taken a jump back in time to charcoal grilling where Grilling and Chillin is what it's all about. Many of us like the convienece of the gas grill but once you step back and have an item cooking on a wood/charcoal grill you realize this is how food should really taste.

The more I think about it does one stop and truly think about the food they just bit into? How was the texture? Was the flavor what you were expecting or something totally off the wall? Would you get that again? Life is short, take a moment and think about what it is you are eating and savor the moment and savor the flavor.

Laundry to fold, holiday decorations to pack up, floors to sweep and mop, errands to run. Is a day off truly a day off? Sometimes I really wonder. A friend once told me to do your best to accomplish all your chores on your work days so your days of are truly days off. But for some odd reason I cannot seem to organize that concept in my life. Does anybody?

My biggest excitement for my days off is what am I going to cook for dinner. I so love having a home cooked meal after being in a restaurant all week long. And to be able to flip through pages of a cookbook and create a recipe as if I was taking on a science project of mixing ingredients together and not really knowing the true outcome till we sit down to eat. It truly is an exciting part of my day. Now today my challenge is to figure out what in the world am I in the mood for and how complicated of a cooking project do I want to get into. Decisions decisions.

Work has started off for 2010 with big changes on the positive side of things. We have a new boss that everyone seems rather pleased with. I know I am. We've been handed some projects probably more than we've had in almost two years and it's actually exhilerating and fun to have the passion back to tackle whats been laid before ones self. Funny how when the mind is put to work and not stagnet one feels more alive. Almost like taking your vitamins or going to the gym and getting a big burst of energy. It truly is "A Good Thing."

As for winter weather around here. The snow is pretty but the frigid temps can go. The chilling air has been brutal for the past week. At times I feel like the little boy from A Christmas Story all bundled up and can't put my arms down. If you dare step out not prepared your frozen in seconds. Can't imagine winter life for my Canadian friends brrrrrrrr. I think it's time for a nice hot cup of coffee to not only warm up but to motivate with all these chores to accomplish. Caffine push here I come.

Mothers Wisdoms

Brrrrr..... it's cold outside. I never understood growing up how my mother would sit there and say she didn't like winter and that I would understand as I got older. I would just laugh at her and say she was crazy. I loved winter and always would. Well here I am in my mid 40's and can honestly say I'm not a fan of the winter months anymore. If I'm sitting in the house watching the snow fall and not having to go out in it then I am rather content. But other than that I'm so miserible having to walk along late at night to my car in the freezing chilled air. The thrill and excitement of being out in the wintery conditions just isn't the same. I remember going out snowmobiling and sledding and not even thinking about going inside for hours. Now just reaching out to my mailbox is longer than I need to be out. I guess mothers do know what they are talking about. Sure wish she was still around to give me more of her wisdom. But since she is not the best I can do is remember all the wise things she did say. And especially remember to always make pie crust from scratch and not unroll from a box. Don't worry mom I got the message loud and clear.

Mastering Ones Own Cooking Challenges

What was it I said? I have enough cookbooks.  Well golly gee, to my wonderful suprise as I arrived home from work Saturday evening I found sitting on the couch hap hazzardly placed where my darling husband tossed the brown cardboard box.  But yet another cookbook that I had ordered.  This one I so anticipated it's arrival.  Mastering  the Art of French Cooking.

As I opened the box it felt like Christmas.  Here it was a brand new copy of Julia Childs masterpiece.  For many years I never realized how much she had truly changed how the world viewed chooking and cooking shows.  She truly was a pioneer.  I look forward to the adventure that awaits me between this lovely hardcovered book.   Who wouldn't, were talking Julia the queen of the kitchen.  As I flip through the pages I realize I can take myself to France.  I may night be able to truly travel there but close enough.  If I can recreate the experince I sure will do so to the best of my ability.  So off I go to flip the pages and find my newest cooking adventure journey to travel.

For the Love of Food

I tell myself over and over again, No More Cookbooks! But it never fails I find one that I just have got to have in my possession.  These days I'm well over 100 cookbooks but each one is special and when it comes to relaxation there are days instead of grabbing a novel to curl up on the couch with.  I grab a cookbook and a glass of wine and escape inside the world of food.  I'm not one of those people who need a cookbook that must have pictures.  I love reading a recipe and invisioning what the results will be.  If there is a picture then that is a treat but not a necessity.

Yesterday as I was out shopping for a dutch oven to make Julia Childs Beouf Bourguignon.  Which by the way turned out fabulous.  Near the various supplies of pots and pans there was the Whirly Bird popcorn maker pot and some other popcorn supplies.  Nearby was a cookbook of all things titled Popcorn by Patrick Evans-Hylton.  In our household Popcorn and Pretzels are the big snack of choice.  But buttered and carmel popcorn can only go so far.

So I was drawn to this Popcorn book.  Yes there is more to the life of popcorn other than just butter.  I skimmed the pages of the book, put it back on the shelf, picked it up again, put it back and then finally picked it back up and put it into my shopping cart.  The two recipes that truly caught my eye were the Parm and Pepper Corn & the Spicy Buffalo Popcorn.  If someone has discoverd a way to make the flavors of chicken wings on popcorn..... I'm in.  So an adventure is soon brewing on the adventures of popcorn.

Today I enjoyed my day off with some new recipes for dinner.  My husband and I are huge fans of chicken salad.  We've been trying some various recipes and buying some.  But of course I have still been on the search for the perfect chicken salad recipe.  Over the past few months I have become addicted to Chic-Fil-A's chicken salad sandwiches.  So I did a lil' searching on the internet and found a recipe that was very similar to what they have to offer.  It was by far the best chicken salad I have ever made.  Chicken Salad with a hard boiled egg is something rather new to me but also extremely tasty.

I guess as I sit here and write I realize how important food is to me.  I'm not a rich person who can travel the world to places I dream of everyday.  But food can take me on adventures to those faraway places and bring them into my reaches.

So for those of you who walk past a cookbook section and wonder should I really pick up that book.  Honestly I would go for the adventure of what lies between those two covers.  And always remember cooking is like a science project.  A little of this and a little of that.   With the mystery of that end result such an exciting moment to embrace.

Bon Appetite

I guess a year in review

Do you ever wonder where time goes?  I sure do.  Here I sit looking at a calendar realizing we are entering the last day of August 2009.  Where has this past year gone and has work truly consumed my time yet again?  Compared to the many years of my past I have gotten more vacations in than I have ever before.  Wow ~ me time.  That is truly an amazing feet for those who do not know me.

I was able to enjoy a wonderful trip to Orlando with my father in January.  Yes so long overdue Father / Daughter time.  We had a wonderful time and of course the week we go to Florida it wasn't the warmest week but it sure was fun.  And we got to eat at Emeril's .  What an amazing dinner that was.  And no matter how fantastic the meal was, dessert was by far the standout of the evening.  I had the most incredible banana cream pie of my life.  And thank goodness Emeril has the recipe published so I am able to recreate that slice of heaven and do I ever mean a slice of heaven.  If you love bananas you must have this decatant recipe.  There's noting else like it.

Then I traveled home to upstate New York for the first time in almost 3 years.  It was an emotional trip for me.  The first time home since my mothers passing and my fathers big move after selling my child hood home.  So going home was very different.  I wasn't going home and sleeping in my old room this time.  But I did stay at my dearest friends home with her family and couldn't of asked for a more relaxing and enjoyable week.

The excitement of the week was truly filled with seeing many high school friends that I have not seen in 25 years.  Yes a few of us decided to have an un-official 25 year class reunion and it even ended up falling on the actual "25" year anniversary from our actual graduation.  Thanks to Facebook actually our planning came together and we had a wonderful evening with great food, laughter and some cocktails.  And well the realitization that when you've lived away from home over twenty years that you and your girlfriend who also moved away many years ago to another part of the country end up getting lost in your hometown have a wonderful adventure of trying to figure out where the heck you are.  You realize how much you can be homesick.  Wendy thanks for the laughter on that adventure.  Leave it to us to get lost.  But the two of us will agree the moment was priceless.  Sure glad we planned our evening out.  It is a moment I will cherish forever.  My week home went by way to fast and sure wished I had time to see more people and would of had more time with my grandfather.

Then my adventure to Myrtle Beach with some of the greatest and craziest friends I know.  Great weather, awesome food, much laughter each and every moment of the day.  For those who travel to MB - a must stop is at Barefoot Landing.  The amazing restaurant of Umbertos.  Do not miss the amazing food and great service.  Our day of jet skiing and a few of us beaching our jet ski's.  Do you realize how heavy those darn machines are?  It was an amazing trip that I got much needed R&R.  I enjoyed a good book and some long awaited sunshine.  And cannot wait to go back and shop at the Southern Pearls Store.  Fabulous jewlery that was just gorgeous to say the least.

So yes 2009 has been a good year.  We are now talking about returning to Canada again for another lil' vacation.  I sure hope we are able to go.  I really enjoy Canada and I am hoping that if this trip does come together that I will be meeting a pen pal of mine.  I truly love Montreal and hope we can venture off to Quebec this year.  Someday I hope to get over to Europe but for now this is our closest shot.

Entering a New Blogging Community

Here I go..... Exploring, discovering and meeting people new and old in this big world of blogging.  Just as one steps out on vacation exploring the sights and sounds of a city they have no idea about.  I am stepping out into a new blog community.  I hope this adventure brings the prospects of discovering what others think of the world and it's wonders.  Here I go - one big step into a new forum.
